- Realizing that the noise coming from under my bed is the new kitten and not an unidentified rodent type animal.
Since we’re talking about happy things here is a quick and easy way to add a little happiness to your day.
16 0z Sour Cream I like DaisyLight
1 loosly packed cup finely chopped cilantro. (Everything is better with cilantro. Not to mention you can get a whole bunch of it at United for 33cents)
One Medium sized Lime. (Do not substitute bottled lime juice. Listen to me please, I’m begging you!)
Mix sour cream and cilantro, add a good squeeze of your lime and stir it up. Done.
Add a dollup to anything you find (tacos, omelletes, burgers, chips, chicken, fajitas, rice) and a smile will come to your face. Not only is it quite tasty but it adds a pretty little ta-da as well.
Mmmmmmmm. Love it!
update: 1-14-08
Replace the lime juice with lime zest, it’s tastier and keeps better in the fridge.

It is beautiful outside, we walked the kids to school this morning instead of driving. Happy
On our way home Joshua and I ran into Sami and Kenzie. Happy.
I came home to my up and running blog. Smiles. Still proud of myself for fixing it. Happy.
At 10:00 I go to book club. Yea! My once a month chance to splurge on a “Sugarfree Lowcarb Decaf Carmel Latte” from The Book House. MMMM Happy.
I also get a chance to sit and talk to grown ups for a little while. More Happy.
This afternoon Joshua and I are going to garage sales. More fun, more happy.
After that is my meeting with Sarah. Happy.
Then we’ll pick up the kids, a few hours later Kurt will be home for family fun night. Happy Day.
