commonly referred to as pizza balls or super surprise meat balls. This is our family’s idea of comfort food.
| 1 | lb lean ground beef |
| 1 | egg |
| 1/2 | cup milk |
| 1 | cup Italian seasoned breadcrumbs |
| 2 | tablespoons dehydrated onion |
| 1 | tablespoon garlic powder |
| 4 | ounces mozzarella cheese |
| 2 | tablespoons olive oil |
| 26 | ounces spaghetti sauce |
- Stir together egg, milk, garlic powder,
onion and bread crumbs. - Mix in ground beef.
- Divide meat mixture into 20 equal sized
pieces. - Cut cheese into 20 equal sized pieces.
- Roll each piece meat around a piece of
cheese, making sure to completely seal the cheese inside of the ball.
- Preheat oil in skillet.
- Add meatballs to pan.
- Brown lightly on all sides.
- When meatballs are browned cover with your
favorite spaghetti sauce and bring to a boil. - Reduce heat to a simmer, cover and cook 10
more minutes. - Serve over you favorite pasta, or on garlic
bread for a tasty sandwich

This yummy meal has become our traditional “election night” fare. While some may tease I’ll go ahead and tell you a secret. Each time I eat these meatballs I am taken back to November of 2000. Even now I can here Dan Rather’s voice coming from the living room. “Florida goes to Gore” I listened intently as I simmered my little balls of meat. After supper we had quite a few leftovers. (there were less kids and they didn’t eat so much back then) Kurt went to bed well before Dan said “Turn the lights down, the party just got wilder.” I sat on the couch for hours waiting for the results. The little meatballs called to me from the kitchen. Sometime in between Mr. Rather’s “This race is tight like a too-small bathing suit on a too-long ride home from the beach.” and his “Smelling salts for all Democrats please.” I finished off the meatballs one by one. By 3AM with the fridge empty and the news anchors delirious I finally went to bed.

Sheila, I haven’t had any major eggplant success as of yet, I’ll let you know when I do
I tried one experiment, went to answer the phone and found that Joshua had eaten it all. So I’m guessing he liked it.
Not much to it though. I sliced the eggplant in 1/4 inch slices. Dipped it in egg(mixed with garlic powder), then coated it in Italian seasoned bread crumbs. Fried it in olive oil and covered it with the marinara. He said it was quite yummy.

Hint: It is also quite easy to cook these in a muffin pan in the oven. Then they’re giant meatballs. I find it easier to cook them this way. I also make my meatloaf in a muffin pan. Little happy meatloves that cook in about 30 min. instead of an hour. Be sure to put a pan underneath to catch the grease though, or you’ll have a big mess in your oven! Trust me.

I think that we should have the pizza balls next Friday instead of the steak, it sounds much better, and it has been so long sence I’ve had them. We’ll talk latter.
