The 60th Carnival of Recipes is up at The Glittering Eye. I submitted my Mozzarella Meatballs this week.
I’m hoping I can come up with a fabulous Eggplant recipe for Sheila that could also be submitted for #61. We’ll see. . .while the kids are behind me 100% in my eggplant endeavor my dear ole hubby is getting a bit tired of the constant experiments.

Thanks!! I have realized that eggplants don’t keep for as long as I think they should. I’ll have the start the quest over next time I go to the grocery store. I’m going to try the meatballs tonight.
