Only 10 minute to impress your friends and family? Bring this simple treat and keep them wondering how you did it.
Here’s a tip I failed to follow: Don’t give anyone the recipe! No matter how much they ask, don’t. Once you tell them how easy it is to make these they are not nearly as impressed. ________________________________________
INGREDIENTS:
• 1 (12 ounce) package Nilla® Wafers
• 4 cups confectioners’ sugar
• 1/2 cup butter (one stick), softened
• 1 (6 ounce) can frozen orange juice concentrate, thawed (buy a 12oz and divide it in half, it’s generally cheaper)
• 1 cup finely chopped pecans (chop nearly to dust)

DIRECTIONS:
1. Crush vanilla wafers to make fine crumbs. This works best when using a food processor. If you don’t have one put the cookies in a gallon sized ziplock and beat the begeebers out of them with whatever you’ve got handy.
2. Add sugar, butter, and orange juice concentrate. Mix well.
3. Shape dough into 1 inch balls. (I use a mini cookie scoop to divide the dough before I shape it, this keeps all the balls the same size.)
4. Roll balls in pecans. Chill until firm.
Although they can be served right away these balls are fabulous the next day and even better the day after that.

I have some that are a week old, and they’re still good! Also, always remember to only use half the can of orange juice, otherwise you’ll end up like me. Lots of orange balls, even a week later. Good thing I like them!
