Good Sunday Morning
I started out with high expectation and emboldened ambition as I signed up for this feat that is The Recipe Carnival. I failed to factor in to the equation a little thing called life. Aww, yes life has indeed thrown me a curve ball when it came to the organization and execution of this here circus.

So it is with humility I ask that as you take this ride you offer a little grace, hold on tight and maybe, well just maybe it might look better if you only keep one eye open…
Here goes:
The Carnival of Recipes: Happy Food Edition.

“Happy Food”

That’s pretty inclusive don’t you think? After all doesn’t food make us all a little happy? Some of us more than others, other wise you wouldn’t be here…

If we’re talking “happy” then we have to start with desert, right?

Shawn Lea, our illustrious carnival queen, offers Banana Cupcakes with Amaretto Buttercream She says “If these don’t make you happy, ain’t much that will! ” Frankly, I believe her.

Now, maybe we shouldn’t have started with the deserts, after all what’s “happier” about food than the memories it brings us?

Oh, how I love black beans! Top it off with a history and social studies lesson and I am happy, I could live without the pigs foot though…

Wow! We’ve gotta try the submission from Kneadle Work, she’s combined Chili and Chocolate! That’s right folks, you heard me correctly, she adds a bit of Mexican chocolate to this fabulous Three-Bean Chili

Besides being a foodie I’m also a shutter-bug so Kevin’s presentation of Steak & Mushroom Pie is right up my alley. Not only does it sound delicious but it looks it as well. You know, I won’t buy a cook book unless theres pictures of each and every recipe…

Maureen knows what I like, not only does she offer a photo but she submits a simple recipe at that. She says it’s “Happy cuz it’s so easy!” Click on over and check out her Cordon Bleu Casserole

Update: In all the fun of the carnival I failed to insert my own submission. I give you my Bruschetta for One not because it’s my best recipe only because it’s my most recent simple satisfaction. In reflection I could improve it a hundred ways but thats not the point. What makes it “happy” is the impromptu fulfillment it provided.
