I had planned on posting some diabetic friendly dairy free recipes for Charleigh. So far none have turned out worth repeating. Here are a few links on Dairy Free Recipes I plan on researching.

Here are a few links to some dairy alternatives.
Perhaps the Vegan Gourmet might have something for us.
The VeganStore also has some Dairy switch ups.
I never thought I’d be shopping “Vegan” but hey, my baby needs some cheese!

Oh look, I just found some local spots as well:
Fountain of Health Natural Food Market in Amarillo

I also found this book:

I’m working on a mock alfredo sauce. I’ll let you know how that works out.

Looks like you have found some great resources! And trying out recipes can be exciting and disappointing. I know we have had that experience with my mom not eating gluten anymore! Thankfully, I can have small amounts of lactose free cheese without it bothering me very much, but a lot of it still bothers Davy, he has more of an allergy, not just a lactose-intolerance.

I do personally think that rice ice cream is pretty good. Rice Dream has their mint with carob chip that I think is yummy. But my favorite is by Good Karma Organic and they have a Mud Pie favorite, which of course is coffee with fudge swirls and chocolate cookie chunks. They are even doubly awesome because their products are organic, and dairy free, soy free and gluten free/wheat free. Yet they really do taste good! They are about the same price as Haagen Dazs and when you can’t have regular ice cream, they taste just as good to you!

Let me know who the alfredo goes! The thing my husband misses the most is my lasagna. There is just now way to make a truly good lasagna without cheese!
