Dairy Free- Cakes, Cookies, Brownies

It’s easy to alter most recipes into milk free delights. It’s a bit more difficult however to find the quick convenience of the beloved boxed cake mix. I’ve found a few good mixes to keep on hand for those “Charleigh” safe treats. Here’s a few we’ve found.

Note: Before you email me and tell me how incredibly unhealthy these all are let me tell you this:

I already know all about the poly, mono, tran, saturated, sugar, processed goop they all contain. Some days a kids just gotta have a treat, and today is one of those kinda days. I know it’s better to make from scratch but sometimes I run plum outta “scratch”. On this Valentine’s Day there absolutely no “scratch” left in the house so I’ll be making mini brownie cupcakes to take to the class party. I’ll also be baking a few safe sugar cookies. And yes, I’ll be watching like a hawk to make sure no milk derived molecules make it on to my daughter’s plate. Because I am officially “That Mom”.

Hey, just a quick recipe for dairy free peanut butter cookies. My friend Amber found this one for me. It is one cup of peanut butter, one cup of sugar and one egg mixed together. Drop into balls and squish if you like. Bake at 350* for about 10 minutes or until the look kind of like cookies. Take them out of the oven and let them set up. It is like a giant piece of peanut candy really. This is also great for people that can’t have wheat or dairy, but of course is not for people with peanut allergies! Happy Valentine’s day!!

Thanks Hillery! We’ve tried that once using Splenda. Worked great. Except we used tainted peanut butter which was later a part of that national recall. Besides the 3 days of vomiting the cookies were great. I think I’ll give it another try. :)

Here’s anouther idea for some great dairy-free
treats. The best part is that they are much
healtier than your regular cookie. Part organic,
no trans fat, etc. It’s a company called Chrysalis Cookies that offers dairy free frozen cookie dough. Their website is at:

Here’s another idea, Fred.

Tell Linda Hardin that posting on the internet, pretending to be some random shopper who “found” the cookies is not only unethical, it’s just rude and sleazy:

And how about disclosing your own interest, while you’re at it? Somehow I doubt you share the last name of the owner of Chrysalis Cookies by coincidence.
